Let me firstly say thanks to you and your staff for your gracious hospitality last week.

 

As I said to you then I have been fortunate, courtesy of my job, to venture interstate on a regular basis and as a result I have been able to entertain clients and dine at some of the “finest” restaurants in Brisbane, Sydney and Melbourne but let me say that without doubt the Empress of China is the best Chinese restaurant that I have ever been to.

 

The atmosphere was great, the food was second to none and the service was excellent and a credit to you and your staff.

 

Please pass on my compliments to everyone at the Empress from both me and Trish.

 

I will recommend the Empress to everyone I know and will definitely return on my next trip to Melbourne. The Chinese beer was a great accompaniment to the meal and went down nicely.

 

A credit too all.

My family and I last Saturday night (20/1/07) very much enjoyed our meal in your restaurant, It was made very special thanks to your good self and your friendly and professional staff, your teams attention to detail and courteous manners were second to none and I will have no hesitation not only too returning to the Empress of china for a meal but I will encourage any of my family and friends to enjoy a meal there next time they are Melbourne. We have been coming to this restaurant for several years and since the new owners have arrived the food is still as good but the atmosphere, service and the space in the restaurant is much better. We enjoy this restaurant much more now.

Recommended entree is Spring rolls or Pork Spare ribs

Recommended main course is Chicken in port wine sauce

ENTRÉE

Steamed Tasmanian Large Oysters/Scallops  -  Our special recipe of Garlic sauce,
    Black Bean sauce, XO Cognac sauce, Ginger sauce and deep fried with five spice salt.

Sung Choi Bao
  -  Finely chopped quail, pork, Chinese sausage, water chestnuts and bamboo shoots
    served in crisp lettuce leaf.

Scallops in Shell  -  Tender pieces of scallop, sautéed in ginger and spring onion sauce served
    in a scallop shell – appealing to both your eyes and taste buds.

Calamari in Pepper Salt  -  Juicy pieces of lightly battered calamari, wok-tossed in a spicy
    pepper salt.

Steamed Prawn and Chicken Pomegranate  -  Diced chicken and prawn, bamboo shoots,
    fresh mushroom wrapped in an egg white pastry.

Stuffed Crab Shell with Portuguese Sauce  -  Fluffy crab meat, with minced onions,
    baked in the shell with mild curry flavour.

Sweet BBQ Spare Ribs  -  Succulent Pork Spare Ribs barbequed in our very special sauce.

Stuffed Crab Claw  -  Whole crab claw wrapped in thick succulent prawn paste.

 

MAIN COURSE:

Szechuan King Prawns  -  Fresh Raw Prawns peeled and divined stir fried with sliced celery
    and bamboo shoots, red chilli, sesame oil with added chicken stock, corn starch and spices.

Peking Duck (2 courses)  -  A mandarin’s choice, Slices of crispy duck skin are wrapped in
    pancake with shallots and cucumber, then the shredded duck meat is stir-fried with bamboo
    shoots and vegetables or in a lettuce cup will be served as a second course.

Cantonese Fillet Steak  -  Eye Fillet steak with your choice of  Szechuan sauce, Peking sauce or
    Honey Black Pepper sauce.

Shredded Crispy Beef With Mandarin Sauce  -  Slivers of Fillet Steak and lightly battered
    with cornstarch and marinated with mandarin sauce lightly fried to crispy perfection.

Pork Ribs with Dark Vinegar Sauce  -  Oven roasted De-boned Pork Spare Ribs slow
    stewed in a pot covered with chicken stock, sweet sherry, onions, dark vinegar, light soy
    and spices until completely tender and served hot with lashings of reduced rich dark sweet
    sauce.

Chu Hau Pork  -  Filleted pork is stir-fried in a spicy soy sauce and served in a mini wok

Macadamia Nut Prawn and Scallop in Birds Nest  -  Prawn, scallop, snow peas, celery,
    bamboo shoots.

Rainbow Shredded Fillet Steak  -  As the name suggests, a colourful dish prepared from
    slivers of fillet steak and vegetables.
